What's for Dinner? Rice, Veggies and Tortilla Soup!

As a plant-based eater, I get lots of questions like, "What do you eat? Can you give some recipes?" So I decided to post pictures and recipes of food Bret and I cook and eat together. For dinner tonight, we had rice, veggies and tortilla soup! 

  
This is the recipe for my soup: 
(serves 3-4)
  • 1 Trader Joe's container of low sodium vegetable broth container 
  • 1/2 cup shredded carrots
  • 1/2 white onion
  • 1 cup chopped broccoli
  • 1 cup chopped cauliflower
  • 8 brussel (semi-cooked) sprouts 
  • 2 roma tomatoes
  • 2 handfuls of spinach
  • 1/2 avocado
  • finely sliced green onion
  • red pepper flakes
  • 1 lemon
  • salt, lemon pepper to taste
  • 2 cups cooked (1 cup dry) brown rice, cooked with vegan butter and 1/4 white onion
  • 2 tortillas (oven baked until crunchy)
Directions:
  1. Bring broth to a boil; add white onion and carrots.
  2. Add vegetables (broccoli, cauliflower, brussel sprouts). 
  3. Add salt and/or lemon pepper to taste;  keep heat on for about 3 minutes.
  4. Turn off heat and add tomatoes
  5. Set aside bowls and add a handful of spinach; add a scoop of brown rice in bowl. 
  6. Serve hot soup into bowls. 
  7. Top with sliced green onions and diced avocado. 
  8. Squeeze as much lemon juice and add extra red bell pepper flakes as much as you'd like!
  9. Crush tortilla into soup and enjoy hot!
 It was so yummy and so filling! I was so proud of my soup :) I hope you try it!
