Quinoa and Kale Salad Recipe


A friend of mine asked me for my quinoa and kale salad recipe. I was so happy she's going to make it! Kale and quinoa are some of the world's healthiest foods! Here it is, enjoy!

Quinoa and Kale Salad
(serves 4)
Preparation time: 30 minutes

Ingredients:
  • 1 teaspoon coconut oil
  • 3 medium garlic cloves, minced
  • 1 cup quinoa, rinsed and toasted
  • ½ teaspoon ground turmeric
  • ¼  teaspoon sea salt
  • 2 cups water
  • 1 bunch fresh kale, cut into bite size pieces
  • ¼ raw sunflower seeds (or nuts, chopped fruit, etc.) – to be used last
Dressing:
  • Juice of 1 lemon or lime
  • ¼ cup extra virgin olive oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon agave syrup or honey
  • 1 small clove garlic, minced
  • As much black pepper as you desire
    • Add all ingredients and whisk together
Cooking the quinoa:
1.     On a hot pan heat coconut oil for 30 seconds or until melted
2.     Add the minced 3 medium garlic cloves and cook for 30 more seconds
3.     Stir in the quinoa and toast for about 1 minute
4.     Add the turmeric and salt
5.     Add the water and bring to a boil, then bring down the heat and cover. Simmer for 15 minutes.
6.     Remove from heat and let it cool for 10 minutes

Preparing the kale:
1.     Wash the kale well and pull leaves away from the stem
2.     Cut the leaves into bite size or small pieces
3.     Add 2 teaspoons of Bragg’s Liquid Aminos (http://bragg.com/products/la.html). This will make the kale easier to chew and digest – at the same time it adds some taste close to being salty but with the high sodium.
4.     Massage the Aminos into the kale and give it lots of love J
5.     Let it sit for a few minutes and you will notice that the kale will shrink to half its original size. 

Quinoa and Kale Salad:
Toss quinoa and kale together; add the dressing and top with seeds/nuts. Enjoy!
